1. Cream the Butter and Sugar:

  • In a mixing bowl, combine the softened butter with caster sugar and brown sugar (or all caster sugar). The combination of both sugars adds depth and richness to the cookies, but you can use all caster sugar if you prefer a sweeter taste.
  • To cream the mixture, use an electric mixer or a wooden spoon if you prefer to do it by hand. Beat the ingredients until the mixture becomes light and fluffy. This usually takes a few minutes of mixing.
